Cherry Vanilla Sorbet

Cherry Vanilla Sorbet – tangy sour cherries with smooth vanilla in a light sorbet.  Perfect scooped into bowls or frozen into popsicles.

Summer is coming and it’s time for frozen desserts. I love sorbets. You can indulge and not feel guilty.

They’re also pretty simple to make.  This one is just cherries, water, sugar, lemon juice and vanilla.

Since cherries aren’t in season yet, I used frozen ones but this is even better with fresh cherries.

I made this for a dinner party and paired it with my lemon mascarpone cake. It was a fabulous combination.They loved the balance of tangy cherries with smooth vanilla.

The great thing is that this doesn’t take much time to prepare. It took about 20 minutes to prepare before I put it in the ice-cream churn. The rest is just waiting.

A  number of friends helped me with this recipe. I took a taste test of the liquid to neighbors before I froze it to check the acidity and vanilla. They wanted a little more tang so I added a tablespoon more lemon juice.

Another friend tried the recipe with her fresh cherries and thought the vanilla was a little too much. Given the variability in vanillas and cherries, it would be wise to add the lemon juice and vanilla a tablespoon at a time until you get the flavor you want.

Cherry Vanilla Sorbet

Ingredients

  • 2 pounds (0.9 kg) fresh cherries, pitted
  • 1 cup water (236 ml)
  • ⅔ cup sugar (135 g)
  • ¼ cup lemon juice (59 ml)
  • 3 tablespoons vanilla

Instructions

  1. Wash, pit and remove stems from cherries.
  2. Place cherries, sugar and water in a saucepan and cook over medium heat until cherries are soft (about 10-15 minutes).
  3. Puree the cherries thoroughly and put through a fine sieve.
  4. Add lemon juice and and vanilla. Chill thoroughly.
  5. Freeze according to your ice-cream maker's instructions.
