Chili Basil Shortbread is a tender, flakey, savory shortbread flavored with Thai chilis, fresh basil and garlic. Cut into rounds and serve with sliced cheese or use this as a crust for your favorite quiche.
I’ve mentioned my friends Luda and James. They have the large vegetable garden and sometimes they give me fresh produce from that garden.
For a few hours work I’ve been rewarded with fresh tomatoes, basil, eggplants, beans, and so much more.
Last week, Luda asked for help with a sewing task. Their clothespin hanger had fallen apart and needed a new cloth bag.
She had already cut up some old jeans and threaded the seams through the wire frames. But she needed someone with a sewing machine to sew up the sides and bottom.
It only took me about 15 minutes to finish the task. I was rewarded with okra, basil, Thai chilis and eggplant.
I love a little spice in things so I was eager to use the chilis but a little goes a long way with Thai chilis. This recipe only used 2 of the chilis so I still need to figure out what to do with the rest.
These rounds are not very spicy. You notice the chilis when you get a slight chili kick at the end. If you want them to be hot, I’d add at least one more chopped chili.
Chili Basil shortbread is delicate so it works well for holding sliced cheese. It also is amazing as a crust for your favorite quiche.
