I’ve never been much of a professional football fan. I love college football but I’ve never really found a pro team that draws my interest. My family always watched the college games on Thanksgiving Day so I have fond memories of playing cards and cheering on our favorite teams.

I am always up for a good party though and Super Bowl gives a reason to have a party. Since I’ve been in Texas, I’ve been invited to many Super Bowl parties and have had some really fun snacks. Usually there is a cheese and fruit tray along with the chili and chips. One thing that is usually lacking is chocolate.

The square in front has 2 slices of dried apricot in a v shape with 2 dries cranberries in the middle of the V. The sqaure to the left of center has a dried cranberry at the bottom and three slices of apricot arranged vertically above the cranberry. The square to the right has 1 slice of dried apricot only. The square in the back is out of focus but is decorated like the square in the front center.

Cereal is quite expensive here and imported groceries are unpredictable so I needed another way to add chocolate to our celebrations. We do have lots of imported French foods here and a few days ago the store had French brie on sale.

Brie pairs so well with fruit and other sweet things. My sister made a wonderful baked brie with walnuts, raisins and maple syrup.

The slice on the front right is topped with two slices of dried apricot arranged in a V with dried cranberries at the point. The slice at the back right is topped with a dried cranberry and three slices of dried apricots.

Baked brie is wonderful but a little harder to serve at parties than finger foods. It’s so much easier to grab bite-sized snacks and return to the celebrations than hanging out by the buffet.

Slicing the brie into bite-sized portions before coating it in chocolate makes it really easy to serve at parties. I tried coating some of the pieces all around and just the tops of some others.

Being the chocoholic I am, I prefer the fully coated variety. They’re so creamy inside and  but you can just coat the tops if you want to save on calories.

Adding a slice of dried apricot or some dried cranberries makes the Chocolate Covered Brie a little more sweet or you can top with nuts for a more savory flavor.
