Chocolate and marshmallows add a little extra love to a school lunch classic in these Peanut Butter Corn Flake S’mores Bars.

A slice of peanut butter Cornflake Smores bars sits on a black, grey and white plate. The coner of the slice points towards the front of the plate and the slice is viewed slightly from above. The golden peanut butter cornflake layer is about 1 inch thick. There are four mini marshmallows visible in the middle along with milk chocolate. There is about a 1 inch layer of peanut butter cornflake mixture on top.

The past two weeks have been crazy and emotional for me. I packed up my apartment in Phnom Penh and moved home to Texas. I only had an hour at home before Becks and I left to take her to Purdue. It’s a two day drive from Austin so I got to spend a four days with my baby before saying goodbye until Thanksgiving. Gasp.

Driving away from Purdue was emotionally difficult. Even though I sent Becks home from Cambodia in January, we talked nearly every day through Facebook messenger. She’s not nearly so far away and we still talk nearly every day but she’s an adult now. It makes me tear up just thinking that. I’m so proud of the woman she has become.

The photo shows a pan of peanut butter cornflake smores bars. A row of bars has been removed from the front so the layers are visible. The bottom and top layers are golden peanut butter cornflake mixture. There is a middle layer that is a mixture of chocolate and mini marshmallows.

My home is pretty crazy right now because most of my things are in storage and my 23-year old son took care of my house while I was gone. He and his roommate had different ideas about “organization” than I do so finding things has been a challenge. Fortunately, Becks had a maid service in before I got back so at least it’s not my son’s idea of “clean.”

I’m putting together my first care package for Becks. Obviously, I need to make something that mails well and can be made with ingredients and supplies I could find in my disorganized house. Becks and I both love peanut butter corn flake squares. They were one of my favorite school lunch desserts and they mail well.

I decided to dress them up a bit with chocolate and marshmallows (also Becks’ favorites). This recipe makes a HUGE batch of peanut butter corn flake S’mores bars so you might want to cut the recipe in half if you don’t have a bunch of teenagers ready to gobble it down.

Ingredients

  • 2 cups sugar (divided)
  • 2 cups honey (divided)
  • 2 cups creamy peanut butter (divided)
  • 12 cups Corn Flakes (divided)
  • 3 cups semi-sweet chocolate chips
  • 3 cups marshmallows

Instructions

  1. Butter the bottom and sides of a large baking dish (9" x 13").
  2. Put 1 cup sugar and 1 cup honey in a large pan (I use a large soup pot). Bring to a boil and remove from heat. Add 1 cup peanut butter and stir until combined. Add 6 cups Corn Flakes and mix thoroughly. Press into the bottom of the prepared pan.
  3. Immediately top with marshmallows and then chocolate chips. Press them down on top of the bottom layer.
  4. Put the remaining sugar and honey in a large pan (I just reuse the one from the bottom layer). Bring to a boil and remove from heat. Add the remaining peanut butter and stir until combined. Add the remaining Corn Flakes and mix thoroughly. While it's still hot, spread on top of the chocolate chip layer and press slightly to seal everything.
