Fresh sliced pear, blue cheese, spring salad mix and a little apple cider vinaigrette make this simple salad a refreshing addition to summer meals.
Every week I get together with some friends who are amazing cooks. Usually, I bring dessert but this week my friends wanted to change things up so I brought salad.
Normally sepping outside my comfort zone is not too much of a problem but my friends make AMAZING salads. So the pressure was on.
I had some fresh pears on hand so I looked for things that complement pears – blue cheese, pecans and a tangy dressing.
The ingredients are so simple it took no time at all to put this pear blue cheese spring salad together. The simplicity really works though.
The sweetness of the pears complements the bite of the blue cheese. The pecans add a little crunch and the dressing ties everything together.

Pear Blue Cheese Spring Salad
Ingredients
- 1 large pear, cored and sliced thinly
- 2 ounces blue cheese, crumbled
- 4 cups spring salad mix
- ΒΌ cup chopped pecans (optional)
Apple Cider Vinaigrette
- 2 tablespoons boiled cider
- 2 tablespoons olive oil
- 2 teaspoons apple cider vinegar
Instructions
- Place the spring salad mix in the bottom of your serving dish.
- Arrange pear slices on top.
- Scatter the crumbled bleu cheese and pecans.
- Combine the boiled cider, olive oil and apple cider vinegar in a container with a lid. Shake vigorously to mix. Drizzle over the salad just before serving.
