The first weekend in November I went to see Becks up at Purdue for parents weekend. She’s a junior and this was the first parents weekend I could attend.
While I was there, she introduced me to Blue Bell peppermint bark ice-cream. It was love at first spoonful. creamy, minty white chocolate ice-cream with chunks of peppermint bark in it. It’s heaven on Earth.
I decided I need this in my life – and not just during the holiday season when Blue Bell makes it.
You do need some peppermint bark. I know, I know. It’s hard to part with but you’ll be glad you did. so set some aside or keep this recipe from Spend with Pennies on hand.
Now on to this recipe. The first step is to melt the white chocolate in the milk. After you add the cream and peppermint, you’ll need to let it cool. The chocolate tends to separate out so you’ll want to stir it occasionally or whisk it right before you churn it.
I found that when I cut the peppermint bark into small pieces, the dark chocolate and white chocolate broke apart. Don’t worry about this. It just makes the finished ice-cream all the more delectable.
You might want to make a double batch. White chocolate peppermint bark ice-cream is that good.
