Triple Chocolate Baileys Cheesecake

Brownies, mini chocolate chips, and cocoa pack Triple Chocolate Baileys Cheesecake full of amazing chocolate flavor. Baileys Irish Cream and Irish whiskey make it a fun adult dessert.

As I was cleaning out my baking supplies in Cambodia, I made this cheesecake. Wine is expensive in Cambodia but liquor is cheap so I had a well-stocked liquor cabinet. You probably won’t be seeing so many recipes with liquor in them now that I’m back in the States.

I love the flavor of Baileys Irish Cream. It goes with just about everything. Baileys pairs especially well with chocolate. I added a little Irish whiskey to give the cheesecake more zing but you can leave it out if you feel the flavor is too strong.  You can also substitute Baileys syrup for the Baileys Irish cream if you’d prefer a non-alcoholic version of this dessert.

Triple chocolate Baileys Cheesecake has a brownie bottom and cocoa and mini chocolate chips in the cheesecake layer. I topped mine with whipped cream and chocolate shavings. You could also use some more of the mini chocolate chips if you don’t have time to make chocolate shavings.

I shared this cheesecake with everyone at church and it disappeared fast! The cool cheesecake on top of the brownie bottom is perfect for a hot evening. Or serve this up as a holiday dessert. It freezes well so you can make it ahead and keep for a special occasion.

Ingredients

  • 1 batch brownie batter (use 1 box mix or these cocoa brownies)
  • 8 ounces cream cheese
  • ½ cup Baileys Irish Cream
  • ½ cup whiskey
  • ¼ cup cocoa
  • â…“ cup sugar
  • 2 tablespoons hot water
  • 2 teaspoons gelatin (1 envelope)
  • 1 cup whipping cream
  • â…” cup mini chocolate chips

Instructions

  1. Line the bottom of a 9 inch springform pan with parchment paper cut a little larger than the bottom. Grease the bottom and sides of the pan.
  2. Prepare brownie batter according to instructions and pour into springform pan. Bake using instructions for 8" pan. Let cool.
  3. Dissolve gelatin in hot water and let cool to room temperature.
  4. Beat cream cheese until smooth. Add all other ingredients except whipping cream and chocolate chips. Beat until smooth.
  5. Beat whipping cream until stiff peaks form. Fold whipping cream and chocolate chips into cream cheese mixture.
  6. Spread cream cheese mixture evenly over brownie and refrigerate until set (about 3 hours).
  7. If desired, top with whipped cream and chocolate shavings.
